Pop-up food experiences are taking the Kansas City eatery scene by storm. Think: Pop-up bars (like these) but with tasty bites instead.

Devoured Pop-up | Known for its iconic cloud crust pizza, this pop-up concept was born in 2020 in founder Jhy Coulter’s backyard. The biz can be found on Thursdays at various KC spots like Mean Mule and Le Lounge.

DISCO BÜRGER | This new concept is known for its hot, gooey burgers and occasional loaded hot dogs. You can find DISCO BÜRGER at spots like Hillsiders in Strawberry Hill and Big Mood Natural Wines.

Snack Bar | From the creators of DISCO BÜRGER, this occasional pop-up offers bites like grilled oysters and shrimp cocktail.

Joker B’s BBQ | It wouldn’t be a Kansas City round-up without barbecue. This pop-up offers wings, rib plates, and burnt ends — and now we’re hungry.
